Just reviewing the latest visa requirements.......there are having a laugh.....
http://www.usconsulate.org.hk/consular/niv/
I quote:
What documents do I need to provide? It is impossible to specify the exact documents you should bring since each applicant's circumstances vary greatly. Supporting documents most often presented are: personal financial documents including inland revenue receipt, deeds to property owned or property tax-rate demands, recent current account statements and bank books. If you are applying for a tourist visa, please bring a leave letter from your employer or school principal. If you are applying for a business visa: a letter of sponsorship from firm; correspondence concerning proposed trip; business profits tax statement; recent current account statements of the firm; etc.

What passport do you have? I have been a few times for work on a British passport and never taken or needed any of the above. I think there is an immigration form the same as or similar to the US visa waiver form but it's been a while so I can't really remember.
As for staying on, it's probably worth no more than a day or two extra. The island is quite pleasant but to see the nicer parts you'd probably need to drive. Some of the more urban areas are a little run down due to typhoons, poor economy etc. The air is good. I hear diving & fishing is OK. Nightlife exists but is better at weekends. Lots of strip clubs because of two large military bases.
Or you could take a quick flight to Saipan, which I hear is nicer.

Saipan is nice. We had to transit in Guam and had to have a visa. Be prepared to run into a lot of CIA/US army types. I felt sorry for some of them - young and perhaps going onto Iraq to be killed for nothing. That made it easier to bear their stupid behaviour.
